She then took over as assistant winemaker at Domaine Newman, and has slowly developed her own négociant business, renting a small space in a winery in Bligny-lès-Beaune with Dominique Lafon. She is achieving impressive results with Pinot Noir using a minimal intervention approach to winemaking and allowing her wines to express a true sense of place.\u003cbr\u003e\u003cbr\u003eIn the 2021 edition of Le Guide des Meilleurs Vins de France, Jane Eyre was awarded two stars, one of only 26 producers in the whole of France to be recognised at this level. Both of these Burgundy legends visit the domaine twice a year to taste, always with great enthusiasm, and to offer their advice on the wines. Coche-Dury has himself said that all of the wines are of at least 1er Cru quality.\u003c\/strong\u003e\u003c\/u\u003e If that wasn’t enough, Adrien himself is very good friends with the team at \u003cstrong\u003eDomaine des Comtes Lafon\u003c\/strong\u003e who have regularly helped him with his winemaking.\u003c\/span\u003e\u003cbr\u003e \u003cbr\u003eFrom separate plots across their tiny holdings of just 1.5 hectares, four wines are bottled as \u003cstrong\u003eBourgogne Blanc\u003c\/strong\u003e, alongside a \u003cstrong\u003eBourgogne Aligote\u003c\/strong\u003e and a \u003cstrong\u003eBourgogne Rouge\u003c\/strong\u003e (from vines which are often used to make a Bourgogne Rose). \u003cstrong\u003e\u003cu\u003eThree wines - Les Equinces, La Demoiselle and Les Champans are from grapes grown in Puligny Montrachet, whilst Derriere Fretille is from Pernand Vergelesses - think of it as their version of a Corton Charlemagne Grand Cru, alongside three Puligny 1er or even Grand Cru quality wines. \u003c\/u\u003e\u003c\/strong\u003e\u003cbr\u003e\u003cbr\u003eThe vines are \u003cstrong\u003efarmed 100% organically\u003c\/strong\u003e and they have been trying out biodynamics in the La Demoiselle vineyard, although Adrien has no interest in attaining certification due to the size of the domaine. All the work in the vineyard is done by hand. In the cellar, Adrien uses \u003cstrong\u003eas little sulphur as possible\u003c\/strong\u003e, \u003cstrong\u003eindigenous yeasts\u003c\/strong\u003e, no lees stirring, \u003cstrong\u003efermentation and ageing in new oak up to 3 years old\u003c\/strong\u003e, and each cuvee spends 18-20 months in wood before bottling. \u003cstrong\u003eNo wines are ever chaptalized. \u003cu\u003eYields are intentionally low in order to make the best wine from the limited holdings – only up to 35 hectolitres per hectare, whilst the maximum permitted in Bourgogne Blanc is nearly twice that, at 68.\u003c\/u\u003e\u003c\/strong\u003e\u003cbr\u003e\u003cbr\u003eVery few producers put this much effort into a Bourgogne and achieve such stunning results - think perhaps Roulot, Arnaud Ente, Leroy, or Coche Dury himself, and Berlancourt is truly up there with the greats.\u003cbr\u003e \u003cbr\u003eOnly around 300-400 cases are produced annually, and the vast majority sees its way onto the lists of \u003cstrong\u003eMichelin starred restaurants across Europe, so, as always, I have only extremely limited quantities to I drastically reduced the percentage of whole bunch I had been using and only purchased one new barrel as I didn’t want the wines to get swamped by oak, especially if the cuvée consisted of two barrels. The aging process and transformation that happens after a year in barrel will never cease to amaze me. In hot years you put them to barrel praying they will somehow slim down, and in leaner years like 2024 and 2017, you hope they will put on some weight…and they do!
