All the work in the vineyard is done by hand. In the cellar, Adrien uses \u003cstrong\u003eas little sulphur as possible\u003c\/strong\u003e, \u003cstrong\u003eindigenous yeasts\u003c\/strong\u003e, no lees stirring, \u003cu\u003eYields are intentionally low in order to make the best wine from the limited holdings – only up to 35 hectolitres per hectare, whilst the maximum permitted in Bourgogne Blanc is nearly twice that, at 68.\u003c\/u\u003e\u003c\/strong\u003e\u003cbr\u003e\u003cbr\u003eVery few producers put this much effort into a Bourgogne and achieve such stunning results - think perhaps Roulot, All the work in the vineyard is done by hand. In the cellar, Adrien uses \u003cstrong\u003eas little sulphur as possible\u003c\/strong\u003e, \u003cstrong\u003eindigenous yeasts\u003c\/strong\u003e, no lees stirring, \u003cstrong\u003efermentation and ageing in new oak up to 3 years old\u003c\/strong\u003e, and each cuvee spends 18-20 months in wood before bottling. \u003cstrong\u003eNo wines are ever chaptalized. \u003cu\u003eYields are intentionally low in order to make the best wine from the limited holdings – only up to 35 hectolitres per hectare, whilst the maximum permitted in Bourgogne Blanc is nearly
