I drastically reduced the percentage of whole bunch I had been using and only purchased one new barrel as I didn’t want the wines to get swamped by oak, especially if the cuvée consisted of two barrels. The aging process and transformation that happens after a year in barrel will never cease to amaze me. In hot years you put them to barrel praying they will somehow slim down, and in leaner years like 2024 and 2017, you hope they will put on some weight…and they do! I personally love the cool years for their transparency. You can see the year and the sites so much more clearly and you find wines of such delicate, ethereal perfume and elegance.
