All the work in the vineyard is done by hand. In the cellar, Adrien uses \u003cstrong\u003eas little sulphur as possible\u003c\/strong\u003e, \u003cstrong\u003eindigenous yeasts\u003c\/strong\u003e, no lees stirring, \u003cstrong\u003efermentation and ageing in new oak up to 3 years old\u003c\/strong\u003e, and each cuvee spends 18-20 months in wood before bottling. \u003cstrong\u003eNo wines are ever chaptalized. \u003cu\u003eYields are intentionally low in order to make the best wine from the limited holdings – only up to 35 hectolitres per hectare, whilst the maximum permitted in Bourgogne Blanc is nearly twice that, at 68.\u003c\/u\u003e\u003c\/strong\u003e\u003cbr\u003e\u003cbr\u003eVery few producers put this much effort into a Bourgogne and achieve such stunning results - think perhaps Roulot, Arnaud Ente, Leroy, or Coche Dury himself, and Berlancourt is truly up there with the greats.\u003cbr\u003e \u003cbr\u003eOnly around 300-400 cases are produced annually, and the vast majority sees In general, the freshness of the 2018s is amazing, as is their ageability. \"The added sulfur is very well bound so that the free SO2 ranks between 60 to 70 milligrams. That's enough for decades of aging, especially in combination with record dry extract levels like 65 grams per liter in the Prälat TBA.
