Since his first vintage in 1956, Henri did no destemming, used whole clusters and fermented for three weeks in concrete tanks with frequent pumping over for gentle extraction. The wine is then aged in a variety of different barrels and casks depending on the particular wine’s structure. None of these barrels is ever less than 10 years old. \u003cstrong\u003eSince 2016, Henri’s son Marcel has taken over the winemaking\u003c\/strong\u003e and has so far continued to make wine exactly as his father did – why change the perfect formula?!\u003cbr\u003e \u003cbr\u003eDomaine Henri Bonneau’s range of Chateauneuf du Pape is produced mostly from \u003cstrong\u003eGrenache, which makes up around 90% of his vines and subsequently, 90% of the bottled wine. The balance is Syrah, Mourvedre, Counoise and Vaccarese. Just like at Chateau Rayas, the grapes are harvested as late as possible\u003c\/strong\u003e, for ultimate ripeness and complexity.
