The key to Champagne Bollinger’s signature style
The PN AYC21 is the 7th cuvée of this Champagne to be released and only the 2nd to be produced from the Grand Cru village of Aÿ, based on the superb 2021 vintage.
Bollinger are famed for their Pinot Noir so there is little surprise that its signature rich and open style shines through. The blend is complimented by 49% of reserve wines including three amazing harvest years: 2012, 2013 & 2014.
The wonderful smoky, nutty and caramel tones imparted by Bollinger’s distinct foudre ageing (50% of the wines are fermented in oak barrels) are already present and the reserve wines add to its exceptional aromatic intensity. On the lighter and fresher side for cuvée PN, this is a charming edition with its deliciously fruity and saline length, enhanced by its 8g/l dosage.

Aÿ is one of the rare 17 villages to be classified as Grand Cru in the Champagne region. The vineyards are situated at the heart of three important areas: the Côtes des Blancs, Montagne de Reims and Vallée de la Marne. 49% reserve wines, including 25% aged in magnums of 2012, 2013 & 2014 Aÿ, are then added to bring a sense of aromatic harmony and further complexity to the blend.
Pinot Noir is one of the key pillars of the Bollinger style and the Maison has built its reputation by showcasing this grape variety. The PN cuvée is the result of research into the different styles of Pinot Noir and its different origins in Champagne. It represents a continuation of the Maison’s heritage and an affirmation of the legendary Bollinger style, while also being a wine that reinvents itself year after year. In this way, each new edition offers a new interpretation of Maison Bollinger’s vineyards and savoir-faire.
2021 was a cooler year giving the PN AYC21 a wonderful crisp energy, taut and tense, with loads of ripe apples, chalky stoney notes, and the classic Bollinger style, showing immense richness held back by awesome freshness, resulting in a wine that shows great Pinot Noir intensity, but in a fresher style that can easily be enjoyed right now, and also has the balance to age beautifully in the cellar.
Most critics are still yet to taste the wine, but Annie Krebiehl MW was very positive, writing “Oh wow! What a lovely Bollinger AYC21……so fresh, so bright and so Bollinger-signature creamy…….a wonderful fit showing warmer and riper Ay in the cooler 2021. Bravo!”
